The elegant Paloma Cartuja, a heady combination of grapefruit and spice, is a house specialty at China Poblano by Jose Andres at the Cosmopolitan in Las Vegas.  

1.5 oz white tequila

0.75 oz yellow chartreuse
0.25 oz cinnamon syrup
1.5 oz grapefruit juice
0.5 oz lime juice
1.5 oz soda water

Combine all ingredients -- except for soda water -- in a shaker; shake to combine and pour over ice; top with soda water and a grapefruit twist.
