Whiteface Lodge in Lake Placid, N.Y., makes this brawny, souped-up version of a traditional gin and tonic:
 3 oz barrel-aged gin
.5 oz honey liqueur
.5 oz lime juice

Shake with ice and double strain into a coupe glass, then top off with tonic. Garnish with a lime wheel and lavender bud.
