The Gin Buck, served at the W New York-Times Square, mellows out gin and ginger with cool cucumber and lime.

2 oz gin
1 chunk cucumber
2 lime wedges
1 oz simple syrup
2 oz ginger beer

lime wheels for garnish

In a shaker, add cucumber, lime wedges and simple syrup. Muddle, then add gin, ice and shake. Strain into a collins glass with ice; top with ginger beer and garnish with lime wheels.
