At Las Ventanas al Paraiso, a Rosewood Resort in San Jose del Cabo, Mexico, groups of up to 24 can get hands-on instruction in the region's traditional "barbacoa" cooking method, in which meat is wrapped in leaves and cooked in an underground oven. Guests get to taste their handiwork along with regionally produced mezcal. Cost: $190 per person.
