At Sable Kitchen & Bar in the Kimpton Hotel Palomar Chicago, several delightful flavors combine to make a modern after-dinner drink like this one.

1.5 oz Cardamaro (an Italian digestivo)
0.5 oz cold-brew coffee
0.5 oz vanilla syrup
1 dash bitters
tonic water

Shake and strain first four ingredients into a Collins glass with ice, top off with tonic and garnish with a lemon twist.
