 The 125-room Hotel Vermont will open in Burlington this spring. The property is aiming to be LEED-certified, with features such as 2,000 square feet of green roof space. An outdoor terrace with an open hearth will look out on Lake Champlain. Four meeting rooms will accommodate events for up to 80. There will be two eating outlets: Juniper, the hotel bar and restaurant, will serve breakfast fare and afternoon tea, and will switch over to a lounge in the evening, serving locally sourced cocktails, limited-production beer and wine, and a small-plate menu. The Hen of the Wood Restaurant will feature the farm-to-table cuisine of 2011 James Beard Award nominee Chef Eric Warnstedt.
