Though they might like a forkful or two of something sweet after a meal, many attendees rarely finish their desserts. Instead of serving a plated sweet, set up a small dessert station with bonbons and other one-bite delights immediately after the event. Sweet-toothed guests can pop as many as they like, while the rest will be happy with one or two treats. Less food will be wasted, and attendees will have a further opportunity to mingle. Thanks to Greg Jenkins, partner of Bravo Productions, in Long Beach, Calif., for the idea. (562) 435-0065;
