To wind down a wellness-themed weekend, the Hyatt Regency Orlando served a dinner trio of chicken, beef and seafood along with wine pairings. The full menu included free-range chicken salad dressed with pistachio vinaigrette, served with micro greens and crispy shallots; an heirloom tomato and saffron custard, made with blue crab, roasted apple crème fraîche, baby watercress and black pepper grissini; and grilled prime grass-fed beef tenderloin, paired with marble potato hash, Barolo wine reduction and root vegetable crudité.
