A river runs through Blancaneaux Lodge (shown), in the middle of the jungle, in Belize. Guests can go horseback riding from the private stable, and meals are designed with crops from the organic garden on property.

At Turtle Inn, on the Caribbean coast of Belize, the thatched-roof cottages feature the flavors of Balinese design. Much of the furniture is hand-carved, including a 200-year-old Chinese fertility bed in one suite.

La Lancha, in Guatemala, is the newest Coppola entry and the most affordable. Activities include fishing in Lake Peten Itza and snooping around Mayan ruins at Tikal.
