Some restaurateurs in Minneapolis and St. Louis last week pledged to reduce or eliminate the use of bottled water in their establishments, citing environmental concerns. Select restaurants in Boston, Chicago, New York, San Francisco, Seattle and Washington, D.C., already have espoused the "Think Outside the Bottle" campaign, an initiative of Boston-based Corporate Accountability International. Gigi Kellett, the campaign's national director, said meeting planners often are surprised to hear that bottled water is "subject to far less scrutiny than tap water and often comes from the same source. You can save money, cut down on waste, and spotlight your local tap water by using classy glass carafes or pitchers during meetings and conventions."
