Hyatt Regency Orlando offered a low-carb, protein-packed menu that included free-range chicken salad dressed with pistachio vinaigrette and served with micro greens and crispy shallots; an heirloom tomato and saffron custard, made with blue crab, roasted apple crème fraîche, baby watercress and black pepper grissini; and grilled prime grass-fed beef tenderloin with Barolo wine reduction and root vegetable crudité.
