Visitors to the Maldives who just
can’t seem to get enough time underwater now can spend an entire
evening 15 feet below sea level. Ithaa, which means “pearl” in
Dhivehi, the language of the islands, opened to considerable
fanfare in April at the Hilton Maldives Resort & Spa.
Up to 14 diners can feast on 270-degree views of aquatic life
while enjoying contemporary Maldivian cuisine, combining local
flavors with a Western aesthetic. Insiders recommend the poached
breast of chicken filled with stewed dates and pickled lime, served
in a mild curry.
