Meetings & Conventions: Short Cuts July 1998

July 1998
Short Cuts:ETC.To wait or not to wait? Traditionalists insist
that letting red wine "breathe" for a half hour or so before
drinking allows unsavory gasses to dissipate and mellows the taste.
But recent lab tests claim to debunk theory, reports the Associated
Press. Still, many connoisseurs are holding fast to tradition. For
best results, they say, pour the wine into a glass or a carafe and
give it a good swirl.
Soup is in again, and Seinfeld can only take part
of the credit. Restaurants are adding more soups to their menus,
says the National Restaurant Association, not only as starters, but
as main dishes and even desserts. And the past few years have seen
a rash of new soup-only restaurants (including Soup Nutsy) in major
cities.
