HEALTH BEAT
Sweet Burgers. Looking for a healthier way to
eat ground beef? Throw some cherries into the recipe. Researchers
at Michigan State University in East Lansing say tart cherries
retard the spoilage of ground beef and reduce the formation of
potentially carcinogenic compounds during cooking.
The study compared regular burgers with those consisting of 11.5
percent diced, tart cherries. The cherry mixture was slower to
spoil in the refrigerator and also had about 70 percent lower
levels of suspected carcinogens that form when meat is cooked.
Credit goes to the antioxidant effects of compounds in cherries,
researchers believe.
But will kids eat them? According to the university, cherry
burgers are now on school lunch menus in 16 states: Arizona,
California, Illinois, Indiana, Kentucky, Massachusetts, Michigan,
New Jersey, North Carolina, Ohio, Oregon, Pennsylvania, South
Carolina, Tennessee, Washington and West Virginia.
