Smart meal planning can lead to more effective meetings, believes the Ritz-Carlton Chicago, a Four Seasons Resort. To support that theory, the property worked with nearby Northwestern Memorial Hospital’s Wellness Institute to design a group catering menu intended to boost attendees’ productivity.
    Dawn Jackson Blatner, the consulting dietitian who helped create the Well Chosen menu, says high doses of fiber and low levels of sodium and saturated fats are just as crucial as carb counts for weight management and alertness. The plan provides three days’ worth of catering suggestions for breakfast (for example, egg white frittata with asparagus); lunch (chicken with caponata sauce) and snacks (guacamole and high-fiber tortilla chips).
    For menu planning at other hotels or at home Blatner recommends using whole grains, limiting refined sugars (which can leave people exhausted within an hour) and serving smaller portions. A great rule of thumb: Make sure half of every meal is made up of fruits and vegetables.
