staff before the event to assure myself that they provide what I
want. For example, I do not expect the chicken to be placed on the
table too soon and become rubbery. We also have some excellent beer
at our events and a lot of it.”

We organize a dinner for 3,000, followed next morning by a
breakfast for 1,000, so if 50 or 100 more show up for a meal, it is
nice to know that they can be incorporated. Of course, the bottom
line is cost.”
