Not only are sweet potatoes absolutely delicious (simply cut up and roasted to a crispy outside, they are irresistible), but they also pack an amazing nutritional punch. According to WebMD, the many different colors this staple comes in (orange, white, yellow, brown, red, pink and purple) indicates they are packed with different nutrients. For instance, purple contains high levels of antioxidants and has anti-inflammatory properties; orange is full of beta-carotene. And one medium baked sweet potato delivers 400 percent of the daily dose of vitamin A, great for healthy skin and eyes, as well as being rich in vitamin C. Did we mention they are also high in fiber? Of course, it's best to serve them as is, without butter and marshmallows, which negate some of the good.
