The Carillon, the fine dining concept at the 297-room AT&T Hotel and Conference Center, will resume bar and dinner service on Aug. 23 with a new seasonal menu, returning the restaurant to full operations.
The property is a preferred hotel for the 15,000-seat Moody Center, the University of Texas at Austin’s new multipurpose arena.
After supporting the hotel throughout the pandemic, chef Kyle Barham is returning to his role as chef de cuisine of the Carillon. "The new menu was designed to complement the grand atmosphere of the restaurant; to feel special, while also being completely approachable," said Barham. "The menu of classic dishes prepared in seasonal ways with local ingredients means guests will feel at ease, whether they’re here for a special occasion or a last-minute craving."
Inspired dishes include chef Barham’s Peruvian corn humitas, a steamed corn cake topped with street corn, pumpkin-seed mole and red-chili popcorn; the heritage pork chop served with charred broccoli and smoked-cheddar casserole, ham hock and chicharrón; and a Texas lamb shank sourced from Goldthwaite, Texas, braised in a stout from the (512) Brewing Company and served with field-pea cavatelli, fava beans, asparagus and gremolata (grated lemon zest, minced garlic and minced parsley).
The Carillon also is welcoming guests back to the bar, where happy hour is the featured event and bar-menu items include the Texas Cheese Board and the House Charcuterie Board. New cocktails have been created for the reopening, such as the "Stay in the Mood" Margarita, marrying jalapeño-infused El Jimador tequila, blackberry syrup, fresh lime juice and jalapeño sea salt; Suntory’s # 6, with Roku gin, lemon juice, raspberry and sage syrup; and the French Mule, using Grey Goose vodka, yellow chartreuse, lime juice and ginger beer.
On the University of Texas campus, the AT&T Hotel and Conference Center features more than 85,000 square feet of event space with state-of-the-art technology. The property has three other dining options: the casual Gabriel's Café, the grab-and-go One Twenty 5 Café, and the Moontower Café, a counter-service eatery.
