Wolfgang Puck Catering has been expanding its roster of plant-based dishes. Now, event coordinators can order delicacies like a vegetable-based Moroccan tagine with cauliflower subbing in for the traditional couscous, taro root tacos (left) and a watermelon appetizer made with cashew "ricotta."
